Churros always seemed like magical creatures that could only be brought into being on the sticky carts at Disneyland or the sloping beaches of Rio de Janeiro. It had never occurred to me to even attempt that kind of gypsy magic (too sacred) until the day I saw this picture:

This photo of a churro ice cream sandwich from Churro Borough went viral on the Internet one unsuspecting day about two months ago, or as I refer to it, “The Day All Hell Broke Loose”. People (myself included) went crazy!!! This culmination of everything perfect in the world is quite literally such stuff as dreams are made on and I knew I had to at least give it a try.

As it turns out, churros are the easiest flippin’ thing to make like EVER. To tell you the truth, throughout my Mexican cooking adventures, I have come to realize that most of the really amazing traditional dishes that we know and love are actually quite simple to make (like tortillas or posole, for example). Once I saw how basic the recipe was, I had a feeling that converting them to gluten-free would be a cinch. Plus, I kinda owed it to my sister, who has been forced to watch my two other sisters and I gorge ourselves on churros for the past several years without being able to join in on the gluten-filled gluttony. Her time had finally come.

After I took a bite of the first gluten-free churro I made, still piping hot from the frying pan and freshly coated in cinnamon and sugar, I squealed and laughed and did an Irish jig. Seriously! I then nervously called my sister over to see if she would give them her gluten-free seal of approval.  “Mmmmm,” she murmured, slowly and blissfully in between bites, “Just like I remember them.” Maybe I cried and maybe I didn’t.

Homemade Whipped Cream

How to Make Gluten-Free Churro Ice Cream Sandwiches and Other Sexy Churro Recipes

Ingredients:

2 cups heavy whipping cream
1/4 cup confectioners’ sugar

Whip the heavy cream and the powdered sugar in a mixer until stiff peaks form. Ummmm yeah that’s it. Fresh whipped perfection.

Use for churro-dunking.

Jalapeño Simple Syrup

Ingredients:

1 cup of sugar
1 jalapeño, sliced with seeds removed

In a medium saucepan over medium heat, combine the sugar and 1 cup water and heat until the sugar dissolves. Add the jalapeño and let sit for 1 hour or overnight. Strain the simple syrup through a fine mesh sieve and store in the refrigerator until using.

Plain Ol’ Cinnamon Sugar Churros

Recipe from Allrecipes.com

Ingredients:

1 cup water
2 1/2 tablespoons white sugar
1/2 teaspoon salt
2 tablespoons vegetable oil
1 cup all-purpose flour (I had success with Bob’s Red Mill All Purpose Flour and King Arthur’s GF All-Purpose Baking Mix. I also tried this recipe with JUST almond flour and another time with a mixture of GF flours — tapioca starch, rice flour and millet flour — those two times were epic fails).
2 quarts oil for frying
1/2 cup white sugar, or to taste
1 teaspoon ground cinnamon

In a small saucepan over medium heat, combine water, 2 1/2 tablespoons sugar, salt and 2 tablespoons vegetable oil. Bring to a boil and remove from heat. Stir in flour until mixture forms a ball.

Heat oil for frying in deep-fryer or deep skillet to 375 degrees F (190 degrees C). Pipe strips of dough into hot oil using a pastry bag. Fry until golden; drain on paper towels.

Combine 1/2 cup sugar and cinnamon. Roll drained churros in cinnamon and sugar mixture.

Churro Ice Cream Sandwich

Use the churro recipe above to make your dough. Rather than piping strings of dough directly into the frying pan, pipe the dough into a swirl onto a spatula (pic above). Lower the spatula into the frying pan and shake it to drop the churro into the oil.

Fry until golden; drain on paper towels. Let cool before assembling the sandwich.

To assemble, kick it old school by grabbing a fat scoop ice your favorite ice cream and squeezing it between two churro swirls. I just made that word up, btw. If you want to get fancy (and I always do) try this method by Lauren Conrad, which entails slicing through the cardboard of the bottom of an ice cream pint. TBH it’s much messier than Lauren makes it look.

Chocolate Espresso Churros

How to Make Gluten-Free Churro Ice Cream Sandwiches and Other Sexy Churro Recipes

Use the churro recipe above, but add one teaspoon of espresso powder and two tablespoons of cocoa powder when you add the cup of flour at the end. Dust with powdered sugar. These were my little sister’s favorite.

Strawberry Jalapeño Churros

Ingredients:

1 cup water
2 1/2 tablespoons white sugar
1/2 teaspoon salt

3 strawberries, minced
2 quarts oil for frying

In a small saucepan over medium heat, combine water, 2 1/2 tablespoons sugar, salt and 2 tablespoons vegetable oil. Bring to a boil and remove from heat. Stir in the jalapeño and let sit for at least one hour.

Stir in flour until mixture forms a ball. Toss chopped strawberries and mix until just combined.

Heat oil for frying in deep-fryer or deep skillet to 375 degrees F (190 degrees C). Pipe strips of dough into hot oil using a pastry bag. Fry until golden; drain on paper towels.

You could coat these with cinnamon/sugar but I liked them plain or with whipped cream. I think they would be nice with a strawberry glaze as well.
